For sandwich:

8 slices white sourdough

¼ cup butter, melted

2 tsp. Dijon mustard

½ cup gruyere, grated

8 thin slices of great smoked ham


For white sauce:

1 cup milk

2 garlic cloves, crushed

4 bay leaves

1 cup heavy cream

2 small onions, chopped

¼ cup butter

3 tbsp. plain flour

2 tsp. Dijon mustard

Fresh nutmeg, grated




  • In a pan, add the milk, cream, bay leaves, crushed garlic & onions. Heat over med and stir until almost to a boil. Turn off heat & let mixture sit for 15 minutes. Strain the liquid.
  • In another pan, add the butter and cook on low for 3 minutes. Add in the milk mixture and bring to a boil. Add in the mustard & nutmeg and stir.
  • For the sandwich, brush the bread with the ¼ cup melted butter.
  • Toast under a grill (melted butter side up) for a few minutes till golden. Preheat oven to 400F. Flip the bread and add some mustard on each slice then the white sauce. Top with some cheese and a slice of the ham. Make the sandwiches from the slices and then add more sauce and cheese on top. Bake for 15 minutes and serve.
