4-5 apples, diced
¾ cup sugar, or less, to taste
½ cup Medjool dates, chopped
½ cup walnuts, toasted and chopped
2 tablespoons buckwheat flour
1 teaspoon baking powder
1/8 teaspoon. Salt
¼ teaspoon. Nutmeg
2 tablespoons coconut oil, melted
1 egg, beaten
- In a crockpot, mix apples, sugar, dates, and walnuts.
- In a large bowl, mix flour, baking powder, salt, and nutmeg and then stir into apple mixture.
- Drizzle melted coconut oil over the batter and stirred again.
- Mix in beaten egg.
- Cook on low for 3 – 4 hours. Serve warm.
NOTE: If you prefer crispier nuts, add toasted walnuts at the end of the cooking period.
